Weeknight Chicken Parmesan

An old favorite recipe re-imagined for preparation as a weeknight family meal.


  2 Tbs Store Brand Olive Oil

  1 Tbs minced garlic

  2 cans (14.5 oz. each) Del Monte® Diced Tomatoes, undrained

  1 can (14.5 oz.) Del Monte® Cut Green Beans, drained

  4 thin-cut boneless, skinless chicken breast halves (3 to 4 oz. each)*

  1/3 cup grated Parmesan cheese

  1 tsp Store Brand Dried Oregano or 1 Tbsp. fresh oregano

  1/2 cup Store brand finely crushed Garlic Croutons

1. Preheat oven to 400°F.

2. Heat oil in a medium saucepan. Add garlic; stir until light golden brown, approximately 1 minute.

3. Add tomatoes. Bring to a boil. Reduce heat to medium-low and cook, uncovered, 5 to 10 minutes or until sauce thickens slightly.

4. Combine tomatoes and beans in a 13x9-inch baking dish. Arrange chicken on top. Sprinkle chicken with Parmesan and oregano. Bake, uncovered, for 20 to 25 minutes until chicken is no longer pink inside. Sprinkle with croutons. Serve with pasta, potatoes or rice if desired.

*NOTE: If chicken breasts are very large, slice 2 large chicken breasts in half horizontally to about 1/2-inch thickness.
