Orange Carrot Soup

Cook Time: 25 minutes

A glorious carrot soup finished with Smucker's® Sugar Free Orange Marmalade.


  2 Tbs Crisco® Pure Olive Oil

  1 lb carrots, peeled and chopped

  1 cup chopped onion

  4 cloves garlic, minced

  1 tsp ground ginger

  1 tsp dried thyme leaves

  5 cups low-sodium chicken broth

  1/2 cup Smucker's® Sugar Free Orange Marmalade

  3/4 tsp salt

  1/8 tsp black pepper

1. HEAT oil in 4-quart saucepan over medium-high heat. Add carrots, onions, garlic, ginger and thyme; saute until onions are translucent. Add broth and bring to a boil. Reduce to simmer and cook until carrots are fork tender.

2. PUREE soup in blender in three separate batches; process until smooth. Return pureed soup to pan.

3. WARM soup over low heat. Stir in marmalade, salt and pepper until thoroughly combined. Serve warm.
